Yellow mustard seeds (Sinapis alba)

Yellow mustard seeds have delicate and spicy taste. They are used whole or milled for preserving vegetables, mushrooms, fish, for cooking vegetable dishes, pork, various game and meat soups etc. The bulk of the seeds is used in making mustard sauce to retain the fragrance.

Interesting to know: Latin name “Sinapis” comes from the Greek word meaning "damage to the eyesight", since when being crushed mustard seeds make one`s eyes tear.

Brown mustard seeds (Brassica nigra)

Brassica nigra (true, French mustard) belongs to the most ancient commodities in Europe. Brown mustard seeds have extremely sharp, tart taste, reminiscent of horseradish. They are the basis for the best varieties of mustard sauces - Dijon mustard and mustard "ravigote".

Interesting to know: New surveys showed that black mustard facilitates digestion, namely it helps to digest fatty food.
